Abstract: Flavor influences the acceptability of nearly everything that passes the lips. In this article, the author discusses flavoring past and present, the chemistry of taste, masking tastes, suspending agents, agents and vehicles (acacia, cellulose, xantham gum and syrup), stability and reflavoring medications.
